My week so far has been exams and studying, and now I think that I may be coming down with something. But, there is no better way to cure my humpday blues. WAFFLES!
Waffle Wednesday has been on my callander every week for the past couple months, and I swear that it makes the day seem a bit brighter. So yes, I make sure to work in a waffle every Wednesday (at least). And this past month I have been working on perfecting my Protein Waffle recipe so that you can enjoy guilt free, delicious protein waffles too.
This recipe is pretty flexible, and it can be made practically any flavor by changing the protein and pancake mix that you use. However if you have any questions about substitutions, feel free to ask in the comments!
The pancake mix that I use is made by The Lion’s Choice. If you haven’t heard of them, they are a small business that creates superfood infused peanut butter, protein cookie dough, and protein pancake mix, among other deliciously healthy things. Their Protein Pancake Mix just needs to have water added to make delicious pancakes, but I prefer to use it in recipes such as this one. Cookies and Cream Waffle Recipe:
- 1 scoop (32g) Cookies and Cream PEScience Select Protein Powder
- 35g (1/3 cup) The Lion’s Choice Cookie Dough Protein Pancake Mix
- 1 tsp baking powder
- Stevia, to taste
- 1/2-1/3 cup (140g) egg beaters orignal egg whites
- 2 TB water
- Preheat waffle iron. Mix protein, pancake mix, baking powder, and stevia in a bowl.
- Add egg whites and water and mix until batter is evenly combined.
- Cook on waffle iron until golden. With my waffle iron, this recipe makes 2.5 large waffles.
