Happy Wednesday everyone! I apologize for the lack of posting lately; I went on a trip into the wilderness, and was not able to access a kitchen, much less the Internet! But as the summer winds down I should be able to begin posting regularly again.
This Waffle Wednesday brings you a chocolate caramel concoction that will leave your taste buds in Star Crunch heaven.
This recipe uses the new Star Crunch flavor of The Lion’s Choice Superfood Infused Protein Pancake Mix. Any pancake mix will work in this recipe, though I use The Lion’s Choice pancake mix for a few key reasons. Star Crunch Chocolate Cupcake Protein Waffles Recipe:
- 1/2 cup (52g) The Lion’s Choice Star Crunch Protein Pancake Mix
- 1/2 scoop (16g) Chocolate Frosted Cupcake PEScience Select Protein
- 1/4 cup Stevia in the Raw (or sweetener of choice)
- 1 tsp baking powder
- 1/2 cup (120g) egg whites
- 2 TB water
- Preheat waffle iron. Combine dry ingredients.
- Add wet ingredients and mix until batter is evenly mixed.
- Cook on greased waffle iron.
- Top with your favorites and enjoy!
Macros for the whole recipe (two large Belgian waffles): 300 calories 3F 27C (3 Sugar, 3 Fiber) 42P
I topped mine with healthy chocolate sauce (2 TB dark cocoa+3 packets stevia+ 2 TB water) and Walden Farms Caramel Syrup
