Mixed Berry Scones

I woke up this morning with one thought: scones. Luckily for me, after looking at a few recipes I figured out a way to make them with the ingredients I had in my pantry- no pastry flour, no fancy fillings. And these lovely scones were born!

I had been meaning to make something with these The Rotten Fruit Box dried fruit. If you haven’t heard of them, they are a company that takes fruit from farms that is not market grade, usually aesthetic blemishes, and freeze dries them to reduce food waste. As someone always looking for companies that work in favor of our environment, I was instantly a fan. While some of their fruit like the pear and the strawberries were sweet and tasty by themselves, the raspberries and blackberries were really tart, maybe not the best for snacking but great in pastries! Here’s the recipe:

Mixed Berry Scones

Ingredients

  • 2 cups all purpose flour
  • 1 TB baking powder
  • 1/2 cup sugar+more for topping
  • 1/2 cup cold butter, cut into tablespoons
  • 1 egg
  • 1/2 cup greek yogurt
  • 1 tsp vanilla extract
  • 1/2 cup The Rotten Fruit Box dried blackberries and raspberries (can sub fresh berries)
  • 1/2 cup powdered sugar
  • 1/2-1 tb lemon juice
  • Instructions

    1. Preheat oven to 400 and line a cookie sheet with parchment paper.
    2. In a stand mixer with the paddle attachment, mix together the flour, sugar, and baking powder. Add the butter and beat until there are only small pieces of butter left in tact.
    3. In a smaller bowl combine egg, yogurt, and vanilla. Pour the wet ingredients over the dry and mix until just combined. The dough should be moist but not sticky. Fold the berries into the dough.
    4. Turn dough onto a a floured countertop and knead into an 8 inch circle. Make sure the dough is not too sticky by kneading in flour a tablespoon at a time if needed.
    5. Cut the dough into 8 equal wedges and transfer to the prepared baking sheet. Sprinkle liberally with sugar for a bit of texture on top. Bake for 15-17 minutes, until slightly golden on top.
    6. While they are baking, combine powdered sugar and lemon juice in a small bowl, adding lemon juice slowly until thick glaze consistency is achieved (it will melt on the warm scones)
    7. When the scones are done baking, remove them and let them sit for 5 minutes. While they are still warm, spoon and spread the glaze onto each scone. Transfer to wire rack to cool completely.
